Birthday Gift #2

My birthday is on Halloween.  I'm turning 25 this year!  I cannot believe that I'm turning 25 already!  But I know that I've become an amazing person who I am proud of being.  And I will be 25% awesome come Halloween (I'm only 24% awesome now because you get better with age).

My first birthday gift was from my dad.  He gave me a ticket to go see the Million Dollar Quartet!  It was AMAZING!!  I loved the show!  He also gave me three Halloween wine glasses, a three-pumpkins-stacked light, and a Halloween night light (I'll post pictures later). 

I feel so lucky to have such loving parents and family. 

Today, I got my second birthday gift.  My aunt Brenda shipped me a gift she made.  When I opened the box, I was hit with a beautiful smell of cinnamon.  I pulled out her gift and it was so beautiful.  I immediately had to hang it on my bedroom door.  It's too beautiful not to be showcased.  She is so creative (she made it).  She also got be a wind-up alligator (my favorite animal) and a pumpkin place mat.

Soup Season

I absolutely love Autumn!  I also LOVE soup!  Soup season is here!!

My mom emailed me the Weight Watcher's Spicy Black Bean soup recipe this morning.  I had planned on looking up a recipe on my way to work and then pick up the ingredients I don't have on the way home.  She ended up crossing one thing off my to do list.  I only needed three ingredients, which I picked up on my way home.


Spicy Black Bean soup
Prep time: 20 minutes
Cook time: 30 minutes
Serves: 8 (based on 1 1/2 cup serving)

Ingredients:

Coat bottom of stockpot (I used a large saucepan) with olive oil.
 
Chop 1 medium onion and mince 4 cloves of garlic (I actually used 3).  Sauté in pan until it looks like it's glazed/translucent
 
Add one can of black beans and onion mixture into the blender

Add red pepper and cumin

Cover and blend until smooth. 
 
Pour mixture back into pot.
 
Add one can of black beans and vegetable broth (since I had a large box of broth instead of a can, I measured it out using the empty black beans can) to the blender

Puree until smooth
 
Pour into pot
 
Stir in last can of black beans (as is, do not puree), can of diced tomatoes with green chilies, and corn into the pot.

Bring to a boil, lower heat to medium and simmer for 20-25 minutes.

Serve in a bowl and enjoy!
 
 
I am so happy I tried this soup.  It was so easy to make.  It came out delicious!  I only added enough spice to give it a little heat.  But you can play with the spices to make it to your liking.  This will definitely be a recipe that makes a regular appearance in my kitchen!  Thank you mom for passing along the recipe!

Progress! Size 12!

I have been a size 14 for over a year.  I have a pair of grey dress pants in my closet that are a size 12.  I haven't been able to fit into them for a long time.

Last week, I went to Springfield to take my interpreter's exam (so I can obtain my license).  I didn't want to wear black.  So I chose a burgundy button-up.  I wasn't sure if I'd fit into a size 12, but my pants have been getting looser.  I gave it a shot.  I tried them on.  Guess what?!  They fit!!

I was able to show up to my exam in pants I haven't been able to fit in and my new haircut.  I felt good about how I looked.  It gave me a major confidence boost.  And I felt good about the test.  I wasn't nervous.  I get my results in a month.

Motivational Thought of the Day


This is all I am thinking about.  I want to take that after picture.  I'm already proud of myself for losing twenty pounds.  Now I need to lose 44.  I cannot wait to see what I look like.  I have an image of what I want to look like in my head.  Do you have one of yourself?  It keeps me moving.

Requested Topic: Gluten


Today, you can enter a grocery store and within minutes see a package that is labeled gluten free.  Everyone is starting to get obsessed about gluten and eliminating it from their diets. 

What is gluten?  Is it bad for you?  Should everyone eat a gluten free diet?

Let's answer those questions.

Gluten, simply put, is the "sticky substance in wheat." 

Gluten makes our food delicious.  However, one in two-hundred people who have celiac disease, gluten is very harmful.  Celiac disease is a condition that damages the lining of the small intestine and prevents it from absorbing important nutrients.  The damage is caused by consuming gluten (wheat, barley, rye, and oats).   

What are some of the symptoms of celiac disease?  Chronic diarrhea or constipation, abdominal pain or bloating, unexplained weight loss, anemia, fatigue, and infertility.

Gluten is relatively new to the human diet.  Our bodies aren't used to digesting it.  So even if you're not having a reaction to gluten, it might be causing some harmful effects on your body.  It's predicted that there will be more cases of celiac disease in the next few years.  Not only celiac disease, but autoimmune diseases that can be caused by a sensitivity to gluten.  Autoimmune disease is the third leading cause of death in the United States.

Eating a gluten free diet may not be enough.  Healing the gut from all that damage takes a long time.  Eating a plant-based diet that eliminates gluten is the best way to heal with food.  Make sure to take a probiotic with a micro-organism count of 20 billion.  Diet and the probiotic will help your body start healing.

When you eat a gluten free diet, you have to do a lot of research.  I have a friend with celiac disease.  I'm hoping to get her to be a guest blogger, when she has more time, to talk about her experience.  She asks a lot of questions when she goes out to eat or when she's at the grocery store.  She needs to know where everything is made and how it's made.  She needs to know the ingredients and have them adjusted when needed.  One time, she was telling me about how she makes a gluten-free Thanksgiving dinner.  She has to look for gluten even where you would never think you'd have to.  When she buys a turkey, she has to know where they process it.  Some places wash the bird, before plucking, with a solution that contains gluten.  When she told me this, I still ate meat.  I remember thinking that I would never think about asking that.  I still wouldn't to this day.  The food industry puts gluten in a lot of our foods.  It's not a simple ingredient to cut out of one's diet.  However, for majority of people it's necessary.

Not everyone needs to cut out gluten.  However, we all could probably cut way back on gluten.  I do not have a sensitivity to gluten, to my knowledge.  So I have no plan, at this time, to cut gluten out of my diet.  Although, next time I get a check-up, I will make sure to get tested for a gluten sensitivity.  I do know that I want to cut my intake in half.  I have always loved pasta.  So I eat too much whole wheat pasta.  I measure it out and make sure to eat a lot of vegetables.  I can make sure to only eat it once or twice a week and then stick to brown rice, quinoa, or other gluten-free grains the rest of the week.

Make sure you talk to your doctor before switching your diet.  You want to make sure to eat well balanced meals and get the proper nutrients.  Do your research.

A Year in My Shoes

Last year, in late August, I was hired at a frozen yogurt shop.  I gained a lot of great customer service skills.  A week and a half ago, I gave my two weeks notice.  I was exhausted and stressed out working two jobs.  I needed to make a healthy decision for myself and just have one full time job.  I already feel less stressed.

As part of the uniform, I bought white sneakers after I was hired.  I bought them from Payless for about $25. 

These are what my sneakers looked like when I bought them.

After one year of working...this is what they look like.


Yes that's a hole I sewed together.  Then it came apart.


I'm so happy that I get to throw these in the trash!  I know that anyone reading this will ask why I didn't just buy new shoes.  I couldn't afford new ones for a while and sewing them worked.  Then when I was able to buy new ones, I was contemplating quitting.  So there was ultimately no point.
So this is what a year in my shoes look like!  (P.S. none of my other shoes have holes!)
