Being Quiet is Sometimes Best


I saw this on Pinterest and it hit home.  I aim to do this every moment of every day.  Last week, this made me think of an incident at work.  Apparently, two women thought I was being rude for not saying excuse me.  They were not in my way and I had enough room to do what I had to do.  I didn't see a need to say excuse me.  I almost bumped into one of the women's things, which I said, "I'm sorry" for (it's a tight space in the locker room).  They proceeded to complain about a girl who had "no home training" and who was extremely rude.  I realized that they were talking about me in front of me!  I looked at both of them, bit my tongue and walked away.  

I thought they were extremely rude and should have said something directly to me in a nice way or just stayed quiet.  But I cannot control what others do.  I only can control what I do.  So instead of saying something in anger, I took a breath and stayed quiet.

I knew if I said something, it wouldn't have come out in a nice way.  Staying quiet was the best decision and sometimes is the only way.

Christmas Decorations!

'Tis the season for Christmas decorations!!  Christmas is my favorite holiday.  I'm planning all year.  I put up my decorations on December 2, the day after my parents headed home from visiting for Thanksgiving.  I've been enjoying my lights.

It's kind of weird that I have nothing to do to prepare for Christmas anymore.  I do have cards and gifts to send out.  But besides that, I'm done.  So now I'm enjoying decorations, music and movies while doing my normal busy work.

I love my decorations.  Here they are!


Last summer, the corner store across the street from me was closing.  So everything was 50% off.  I went in and walked out with tons of Christmas stuff.  I ended up getting 75% off it all because I was the first or one of the first to buy the Christmas merchandise.  I got these amazing lights!  I love them!

The tree and majority of the ornaments were my grandparents'.  I always feel connected to them when I decorate.  My favorite is the angel for the top.


I keep my favorites on the top of the tree.  Olaf is new (my dad got me him when he was here for Thanksgiving).  The hummingbird is one of my favorites.  My grandmother and I always loved hummingbirds.

My nativity set that my grandmother passed down to me.  She hand painted all the pieces. I cherish this set.  I do my best to take care of it.


Baby Jesus won't be uncovered until Christmas Day.

Grateful Posts

Nov 30 - I am grateful for an amazing time in a free Pure Barre class hosted by Chiorganicgirls! I am going to make sure to take one Pure Barre class once a month until I can afford more. I  PURE BARRE!!!

That was my last grateful post on Facebook.  I did one year and one month.  I am very proud of myself for accomplishing that goal.  I didn't even know how long I wanted to keep it going for.  Coming up with one thing you're grateful for every day isn't always easy.  I had my challenging days.  But it has helped me beyond words.

I do not want to stop writing what I'm grateful for and I've had such positive reactions to them that I know I need to keep them going.  I will be writing what I'm grateful for in a journal and then pick three to post every Saturday.

My first is the one above and here are my other two:

Thanksgiving Meal

I focused on keeping my Thanksgiving meal traditional but simple.  I wanted the day to focus on spending time with my parents.  I actually completely forgot to take pictures.  So these pictures are from last year's Thanksgiving meal and from online.  

The appetizer as I was cooking was celery and hummus.  I bought a variety pack with four different hummus: spicy, regular, red pepper, and garlic.  I loved the spicy.  



I made the cranberry sauce the day before.  I didn't want as much to do.  Plus fresh cranberry sauce is always better the next day!  I just followed the recipe on the package: cranberries, water and sugar.


Ever since I was little my family has had mashed turnips.  Unfortunately, I couldn't find the yellow turnips like I wanted so I had to settle for the white.  They're still yummy!
Last year I found a recipe and did that.  But this year I just added salt and pepper.  It was simple and a lot better than last year!


Garlic Mashed Potatoes

4 large potatoes
1/2 cup soy milk
3 tbsp. vegan butter
Salt and pepper
1 tsp. garlic powder (I actually added a whole bunch)
Optional: 1/4 cup vegan cream cheese (I actually did this last year and didn't think it was needed)

Peel potatoes and cut into quarter chunks.  Boil until potatoes easily break apart, about 20-25 minutes.
Drain the potatoes in a large mixing bowl, smash the potatoes.  As you are mixing the potatoes, start adding the soy milk and butter.  Lastly add the salt and pepper and any other herbs you may like.


Gravy

2 cups soy milk
Sage, Rosemary, Thyme 
Salt and pepper 
(I actually add a lot of seasoning because the soy milk and flour make it sweet.)
1/8 cup vegan butter
1/2 cup vegetable broth
2-3 tbsp. corn starch or flour

Heat soy milk and butter in large sauce pan.  Add sage, salt, pepper and seasoning to taste.  Bring to a boil and let simmer for a few minutes.  Add vegetable broth, turn heat off or very low.  In another bowl combine water (1/2 cup) with corn starch or flour to create a roux.  Slowly add roux stirring often until gravy is thick.


You make this like regular stuffing that's boxed.  It was convenient and easy.  But I wasn't a fan of the taste.  I think I'll go back to making vegan stuffing from scratch.


I grilled these faux sausages.  I actually love the Field Roast Mexican Chipotle sausage better.  But I thought these fit the Thanksgiving theme.  My mom wasn't a fan but my dad loved them.



This is a bad picture.  But I made apple crisp for two (my dad doesn't eat dessert).  It was perfect.  There was just enough for two people and no leftovers.



I topped it with Turtle Trails ice cream!

Apple Crisp for Two

1 large apple, diced (I used two and it worked out better)
Juice of a lemon
1/2 tsp ground cinnamon
1 tbsp. sugar
Pinch of salt

Topping:

1/2 cup oats
2 tbsp. butter, at room temperature
Pinch of cinnamon
1 tbsp. brown sugar

Preheat oven to 350 degrees.   In a bowl combine diced apple, lemon juice, sugar, cinnamon, and salt.  Toss to coat, then divide into individual ramekins.  In another bowl, combine oats, cinnamon and sugar.  Cut in butter with a knife until texture resembles crumbs.  Sprinkle topping over apple mixture.  Bake 20-25 minutes or until golden brown and bubbling.


I also roasted parsnips, carrots, and butternut squash in the oven with olive oil, rosemary, sage and thyme.

Everything was delicious.  I think next year will be the same except for homemade stuffing and tofu instead of faux sausage.  It was a great Thanksgiving.

Christmas Craft Fun

My parents came to visit me for Thanksgiving.  We normally go see a lot of movies while they're here.  This time we did something different.  The Saturday after the holiday, we had breakfast with my guy so he could meet them again.


Afterwards, my parents and I went to my place.  We made soup and then crafted all day.  My mom got us wooden ornaments to decorate.  One was a snow globe and another was a framed box.

I am very proud of mine.  My snow globe took a long time.  By the time I finished that one I knew what I wanted to do for my framed box.  I felt so creative and in the Christmas spirit!  It was so much fun to do something active and creative with my parents versus sitting in a dark movie theater.  We did watch Christmas movies while making the ornaments but it was really to keep us in the spirit while focusing on the ornaments.

Motivation: Get up Early


I saw this and knew that is what I needed to do.  I don't hate what I see in the mirror.  But I know that I want to be at my healthiest and fittest self.  Right now, that's not who I am.  So I've been making an effort to wake up early to workout first thing in the morning before work.  That way I have no excuses and I make better choices throughout the day.

Exercise: PURE BARRE!!


I absolutely love Pure Barre!  I took a class during the summer when I auditioned to be an instructor.  I didn't end up getting the job, but I fell in love with this workout.

It's a low-intensity workout mixing Ballet, Pilates, and yoga.  Don't let the words "low-intensity" fool you.  You will feel the workout in every inch of your body!  It tones you from head to toe in every class.

November 30, I went to a free class hosted by Chiorganicgirls at a studio in Lincoln Park.  The two women who write the blog are friendly and outgoing.  Their blog focuses on finding free or cheap food, exercise, and fitness places all over Chicago.  They'll even let you know what they find when they travel.  It's a great blog with great women.

The class was amazing!  I struggled with planks a lot.  I noticed other areas that need improvement.  I think that's why Pure Barre is so great.  It's easy on the body while making you sweat.  You can easily figure out your strengths and what needs improvement.

At the end of class, Chiorganicgirls did a raffle and took a group picture.  They were wonderful hosts and Pure Barre was fantastic.  The owner of this Lincoln Park location was so nice and friendly.  She can easily answer any of your questions and give encouragement.  It's such a great environment.

I have a goal to work on exercises at home and then take one Pure Barre class a month.
